Tahini

Tahini is a staple in the Mediterranean cuisine. We love to spread it on bread, drizzle it on our salads and food, or dip veggies in it. We all love it so much and it is always a part of our Friday dinner. It is so easy and takes minutes to make and as a bonus it is also very healthy. It is made out of ground sesame seeds and it is rich in nutrients. You control the thickness of it by the amount of water you add to either serve it as a spread (thicker) or a dressing (thinner). The raw tahini have a long shelf life, but once you prep it, it will keep in the fridge for 2-3 days. I made green tahini, by adding parsley to it, but you can skip it if it is not your thing.


INGREDIENTS

1/2 cup of raw tahini

Cold water as needed

1-2 garlic cloves – minced

Fresh lemon juice from half a lemon

1/4 cup fresh parsley leaves (optional)

Salt to taste


INSTRUCTIONS

Pour the tahini into a small bowl and start adding the water gradually, only 2-3 tbsp at a time, stirring well before adding more. At the beginning it will look lumpy, like the tahini went bad, but it didn’t , just keep stirring and the lumpiness will smooth up. When you reach the consistency you desire, add the rest of the ingredients and stir well. important to mention that the lemon juice will add more fluids, so stop adding water a little bit before you reached your desired consistency. If you choose to add parsley, place it all in a blender and blend well. In this case you can don’t need to mince the garlic, the blender will do the work for you. again, add water gradually, till you reach the desire consistency.
