One pot meal – Chicken thighs with caramelized onions, cinnamon and noodles

One pot meals are a great solution for busy moms. This dish has a hint of sweetness to it enhanced by the caramelized onions, cinnamon and honey. Add egg noodles and you got yourself a great comfort food meal for a chilly day.


INGREDIENS

5-6 chicken thighs

2 big onions cut to strips

1 cinnamon stick

2 tablespoons of honey

1/2 teaspoon of turmeric

Chili flakes – optional

Salt and pepper to taste

1/4 cup oil

1 package of egg noodles – any kind you like.


INSTRUCTIONS

Wash the chicken thighs and remove the fat.

In a sauté pan, on medium heat, warm the oil and sauté the chicken thighs on both sides till brown.

Set aside and place the onions in the same pan .

Sauté till the onions are caramelized. Be patient, it will take some time. do not continue before the onions are perfectly caramelized since its the main flavor factor in the dish.

Add the spices and stir.

Add the chicken, smooth side up, cover and lower the heat.

Cook for 30 minutes. Do not add any water.

After 30 minutes, add one cup of water and bring to a boil.

Place the uncooked noodles on top, cover and reduce the heat to low.

Cook for 15 minutes. Turn off the heat and stir the noodles.

Cover again for 10 minutes with the heat turned off (do not remove from the range).
