
Classic yummy cookies, that never fails. Will make around 45 small cookies or 20 large ones.
You will need:
1 cup soft butter (240gr)
1.5 cups raisins
1 cup brown sugar
1/2 cup white sugar
2 tsp cinnamon – optional
2 eggs
1 tsp vanilla
1 tbsp molasses
2 cups flour
1 tbsp cornstarch
1 tsp baking soda
3/4 tsp salt
3 cups old fashion oatmeal
Instructions:
Soak the raisins in hot water for 15 minutes and drain well.
Combine the butter with both sugars.
Add the molasses, eggs and vanilla and mix well.
In a separate bowl combine the flour, cornstarch, cinnamon, salt and baking soda and add to the batter – mix well.
Add the oatmeal and raisins and mix well.
Refrigerate the dough for 30 min.
Preheat your oven to 350f/175c.
Using ice cream scoop, place balls of dough on a baking sheet lined with parchment paper, and press them down gently, make sure to keep enough space between the cookies as they spread while baking. Bake for 10-12 minutes till golden and set on the sides and still soft in the middle.
Cool for 15 min
