
A staple in the Israeli cuisine. This salad pairs well with breakfast, lunch, or dinner. I love eating it with white rice and tahini dressing. Tomatoes and cucumbers are the base of the salad, to which you can add other veggies as suggested below.
INGREDIENTS
2 cups finely chopped cucumbers
2 cups finely chopped tomatoes
1/2 red onion finely chopped (optional)
Chopped parsley (optional)
2 tbsp olive oil
Salt to taste
INSTRUCTIONS
Mix all the ingridients well and enjoy
Optional veggies to add – avocado, lettuce, celery, carrot, green onion.
