Israeli Couscous

The is a comforting side dish that goes well with so many dishes. it is actually a kind of pasta, so it is super easy to make and just as yummy. Cooking directions on the package might be different, but this method will ensure that the couscous will not stick together as it gets cold.


INGREDIENTS

2 cups of Israeli couscous

2-3 tablespoon of caramelized onion or dry onion flakes

1/4 cup of oil

1 teaspoon of salt

Pepper to taste


INSTRUCTIONS

In a medium pot, on high heat, bring 3 cups of water to a boil.

Add couscous to the boiling water and stir well.

Reduce the heat to medium and cook for exactly 3 minutes (please place a timer).

Drain and wash in cold water.

In a medium nonstick pot, on medium heat, mix oil, onions and couscous and mix well in order to coat all the couscous in oil.

Add salt and pepper and mix.

Reduce the heat to low/medium (I use 2/10), cover and cook for 5 minutes.

After five minutes, open the cover and mix well.

Cover again and keep cooking for additional 5 minutes.

This time DO NOT open the lid, and keep the pot covered on the range for another 10 minutes.

Uncover and mix well.
