
This is hands-down, the best soup ever. There is nothing more comforting than a hot onion soup on a cold winter day. Whenever I make this soup, I freeze the leftovers so I can have it ready in minutes the next time I am craving it, because as you know, to make onion soup, you need thyme and TIME.
But let me tell you this soup really worth it.
INGRIDEINTS
5-6 big onions – Sliced to strips from head to tail
2 tablespoons olive oil
2 tablespoons butter
1/2 teaspoon salt
2 tablespoon flour
2 tablespoons bourbon/brandy/dry sherry
1 cup white wine – dry
3-4 thyme stems
1 big bay leaf (or 2 small ones)
2 Litter beef stock
1/2 stick of butter (1/4 cup/60gr)
1 stale baguette – sliced
One garlic clove
2 cups Gruyere/Swiss cheese, or mix – shredded
INSTRUCTIONS
To a big pot on medium to high heat, add oil and butter. When the butter melts add the onions and salt. The onions will fill the pot, but no worries, it will shrunk as it cooked.
Cook till Caramelized (about 40 minutes) stirring occasionally.
When you reach deep brown color add flour and mix well for a minute or 2
Add bourbon/Brandy/dry sherry and mix well.
Once all the fluids evaporates, add white wine and mix well.
Add bay leaf and thyme, mix, and add the beef stock.
Bring to a boil, reduce the heat to low medium, cover the pot and keep cooking for additional 20 to 30 minutes.
While the soup is cooking, place the baguette slices on a baking pan lined with parchment paper.
Place small butter square on each slice and bake at 420°F or 200°C for 5 to 10 minutes till nicely Golden. Removed from the oven and immediately rub garlic clove on each slice to give it a nice garlic flavor.
Poor the soup into a serving bowl, place 2 slices of baguette on top of the soup, top it with some shredded cheese and place it in the oven on broil mode for only 1-2 minutes till the cheese grilled nicely.
Watch it carefully so it won’t burn.
If you do not have a soup bowl that is heat resistant, you can toast the baguette and cheese separately, and place it on the soup when it’s ready.
Pour yourself some of the leftover white wine and enjoy
