INGREDIENTS
For the cake:
2 cups sugar
Orange zest from 1 orange (optional)
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
Pinch salt
4 eggs at room temperature
1 cup oil
2 teaspoons vanilla extract
2 cups finely grated carrots
2 cups crushed pineapple – drained
1 cup chopped walnuts/pecans (optional)
For the frosting:
2 cups heavy cream
1 package vanilla instant pudding (3.4 oz/96gr)
1/2 cup sour cream
2 tablespoons powdered sugar
INSTRUCTIONS
Preheat oven to 180°C/350°F. Line 2 x 9-inch pans/22cm with parchment paper and spray with oil.
Rub sugar and orange zest together to release the aroma.
In a big bowl, mix flour, baking powder, baking soda, sugar, and spices. Add eggs, oil, vanilla extract, and mix well.
Add carrots, pineapples, and nuts, and mix well, only till combined.
Divide the batter evenly between the 2 pans.
Bake for 30-40 minutes, till a toothpick comes out clean. Remove from oven and cool completely.
In a mixer bowl, whip heavy cream and vanilla instant pudding to soft peaks.
Add sour cream and powdered sugar, and keep mixing to stiff peaks.
Place one layer of cake on a serving plate. Spread half of the frosting and place the 2nd layer on top. Frost the top and sides with the remaining frosting. Keep refrigerated for up to 3 days.

This cake is in memory of Dolev Yehud (35), who was murdered on October 7th, 2023, in Kibbutz Nir Oz by Hamas terrorists. Dolev was a civil engineer and a volunteer medic. When the terrorists entered the kibbutz, he left his pregnant wife and his 3 boys in the safe room and went to help the kibbutz members with their injuries. His family was locked in the safe room for 9 hours till rescue arrived. His sister and her partner were kidnapped to Gaza, and since there was no sign of him, everyone believed he was kidnapped too. His sister Arbel was released from Gaza today; her partner is still a hostage.
