A tropical twist on the classic and loved tres leches cake.
No egg separation needed. Beating room temperature eggs with sugar, for a long time and using baking powder, will ensure reaching an airy and spongy cake that will willingly soak the large amount of liquids that it is drown in, resulting in a super moist cake
INGREDIENTS
For the cake:
1.5 cups flour
1 tablespoon baking powder
5 eggs in room temperature
1 cup sugar
1/4 teaspoon salt
1/2 cup milk
1 teaspoon vanilla extract
For the milk mixture:
1 can condensed milk (14oz/397gr)
1 can coconut milk – not cream (13.66 fl oz/403ml)
1/2 cup milk
1/2 cup heavy cream
2 tablespoon rum (optional)
1 cup mango puree (frozen or from fresh fruit)
2 tablespoon powdered sugar
For the whipped cream:
1.5 cup heavy cream
1/4 cup instant pudding
1/2 cup mango puree
For the topping:
1/2 cup mango puree
1 fresh mango ״cheek”
2 mint leaves
INSTRUCTIONS
Preheat your oven to 350°F or 180°C
Oil the bottom (not the sides) of a 9x13inch/33x23cm baking pan
In a small bowl, mix flour and baking powder.
In the mixer bowl, beat eggs, sugar and salt on medium high speed for 10 minutes (no less).
Sift half of the flour mixture on top of the eggs mixture and fold gently. Add half of the milk and vanilla extract and keep folding. Repeat with the remaining flour and milk. Fold only till well combined. DO NOT over fold, so you won’t end up with a dense cake.
Bake for 20-25 min till golden brown and a toothpick inserted at the center of the cake comes out dry.
While the cake is in the oven, prep the milk mixture by simply combining all of the mixture ingredients together. Remove 1 cup of the mixture and save it in a sealed container in the fridge for serving.
When the cake is ready, poke it all over with a fork or skewer and pour the rest of the milk mixture (1 cup saved for later) on the cake. Pour the mixture gradually, waiting for the cake to soak it before adding more.
Cool the cake completely and then refrigerate for at least 4 hours.
Mix 1 cup of mango puree with powdered sugar.
Place 1/2 a cup of the mango puree together with the rest of the whipped cream ingridients in a big bowl and whip using a hand mixer till you reach soft peaks.
Spread the cream on the cake and smooth the upper surface.
Place 1/2 cup of mango puree in a piping bag and draw straight lines across the cake widthwise in equal distance apart (see photo).
Using a toothpick draw lines across the cake, lengthwise, alternating directions left and right in equal distance apart (see photo).
To make the mango rose, peel the mango and cut one “cheek”. Cut thin slices widthwise, spread the slices in a long line and make a spiral/rose shape. Use serving spatula to move the “rose” carefully from the cutting board to one corner of the cake. Add 2 mint leaves next to the rose.

To serve, place 2-3 tablespoons of the milk mixture that we kept, on a serving plate and place the slice of cake on top. Keep refrigerated for 2-3 days.

This cake is in memory of an Israeli hero – Aner Shapira (22) from Jerusalem. Aner attended the Nova rave in the south of Israel (Oct 7th, 2023) with his best friend Hersh Goldberg Polin and another friend. When rockets from Gaza started filling the sky, the young men escape in search of shelter. They found a public rocket shelter where other young party goers hide, and stayed there. Little did they know, that the rockets will be followed by invasion of Hamas terrorists to Israel. All the public shelters along the southern roads were full with young people from the party and became a death trap. There were over 20 people squeezed in that shelter, totally terrified. When the terrorists arrived, Aner placed himself at the entrance, introduced himself to the people in the shelter and told them not to worry, since he is going to catch the grenades and throw them back outside. He asked them to help him if he misses any grenade. He was able to catch and throw back 7 grenades before the last one exploded in his hands and killed him. Hersh, that was standing next to him, lost his arm and was able to use his t-shirt as a tourniquet. The terrorist kept shooting and throwing grenades into the shelter. Only 8 people survived from that shelter all thanks to Aner. Hersh and others were abducted to Gaza. Few days ago, after 11 months in captivity, Hersh was shot by Hamas terrorists in Gaza, and his body, along with 5 other hostages, was found by Israeli soldiers and brought back to Israel for burial.
Aner was the oldest son of Shira and Moshe. He left behind 6 siblings.
