Beef filled artichoke hearts with green peas in lemon sauce

Experience the delightful combination of beef-filled artichoke hearts, green peas, and a zesty lemon sauce, all of which come together to form a tasty and uncomplicated meal characterized by Mediterranean flavors. Preparing it is remarkably simple as the artichoke hearts resemble small bowls, requiring mere scooping of the desired filling.


Ingredients:

For the filling:

1 pound ground beef (0.5kg)

1/2 onion, chopped

6 garlic cloves

1/2 fresh bunch parsley

lemon zest from one lemon

Salt and pepper to taste

For the base:

10-14 frozen artichoke hearts (800 gr).

For the sauce:

1/4 cup olive/vegetable oil

2 cups green peas – fresh or frozen

1/2 onion, chopped

2-3 celery ribs – chopped

lemon juice from one lemon

1/2 teaspoon turmeric

1/2 teaspoon black pepper

salt to taste

2 cups water


Instructions:

Prep the filling – In a food processor, thinly chop the onion, garlic cloves, and parsley.

Transfer to a bowl and add the rest of the filling ingredients.

Mix well to combine and set aside.

Prep the sauce – Warm a sauté pan on medium-high heat and add the oil.

Sauté the onions and celery until translucent. Add the peas, spices, lemon, and water and bring to a boil.

Scoop the filling into each artichoke heart and tighten well.

Arrange in the pan with the filling facing up and bring to a boil.

Reduce to low-medium heat, cover the pan, and keep cooking for an additional 30 minutes.

Can be served over white rice.
