cake for sabbath – Moist spiced honey cake

Indulge in a moist cake that showcases a deep, honey flavor, beautifully complemented by a selection of warm spices. Notably, no mixer is necessary – just mix the ingredients in a bowl and bake. So simple and so good


Ingredients

2 cups flour

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup honey

1 1/2 cups boiling water

2 teabags black tea/Earl Gray/ chai/ cinnamon

2 teaspoons cinnamon

1 teaspoon ginger

1/2 teaspoon nutmeg

1 cup oil

2 eggs at room temperature

1 cup dark brown sugar


Instructions

Preheat your oven to 340°F/ 170°C.

Oil 2 loaf pans or one 9-inch pan.

Place teabags in boiling water for 10 minutes, then pour into a bowl with the honey, and mix well.

In a separate bowl, mix the dry ingredients: flour, baking powder, baking soda, salt, and spices (cinnamon, ginger, nutmeg).

In a big bowl, whisk eggs and sugar to a light, fluffy mixture. Add oil gradually and keep whisking to combine.

Add half of the dry ingredients and mix to combine.

Add half of the tea mixture and mix to combine. Repeat adding the remaining dry ingredients and wet ingredients to the bowl.

When all is combined, pour the batter to the pan.

Bake (no convection) on the lower shelf for 40-50 minutes, till a toothpick comes out with crumbs.

Cool completely and dust with powdered sugar. Can keep at room temperature for 2-3 days.

This cake is in memory of Keshet (meaning rainbow) Casatotti-Kalfa (21) and Motti Zoherman (73), who were murdered by Hamas terrorists at the Nova festival in Israel on October 7th, 2023.

Keshet had a gunshot wound, and Motti tried to help him and drive him to the hospital. On the way there they encountered more Hamas terrorists, and they were both murdered. They didn’t know each other before but died together.
