Chicken thighs and mushrooms in red wine

Cooking with red wine will elevate any dish. In this case, simple chicken thighs transform to a gourmet meal made with a few simple ingredients and prepped in minutes, if we are not taking into account the marinating time.


INGREDIENTS

2 cups red wine

6-8 chicken thighs, washed and clean of fat

6-8 shallots cut in quarters

8-10 big mushrooms cut to quarters

1 Tbs flour/cornstarch (gluten free)

Salt and pepper to taste

1/4 cup Oil


INSTRUCTIONS

In a sealed container, place the chicken thighs and red wine and refrigerate overnight or at least for 1hr if you are short on time.

Strain the chicken thighs and keep the wine.

In a sauté pan on medium to high heat, warm the oil and sauté the chicken for 1-2 minutes on both sides. set aside.

To the same pan, add shallots, mushrooms salt and pepper, and sauté till the ingredients soften.

Sprinkle the veggies with cornstarch/flour and mix well.

Keep cooking for 1-2 more minutes and add the wine.

bring to a boil.

Add the chicken, reduce the heat to medium-low, cover and cook for 30 min.

Remove the chicken, turn the heat to high and reduce the sauce till it thickens.

Add back the chicken and remove from the heat.

Serve over mashed potato’s or white rice.
